Instructions

  1. In a small pot, combine the basmati rice with 1 cup water and a pinch of salt. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes until tender. Remove from heat and let stand covered for 5 minutes, then fluff with a fork.
  2. While the rice cooks, heat 1 tablespoon butter and 1 tablespoon olive oil in a large skillet or pot over medium heat. Add the diced onion and cook, stirring, for 3-4 minutes until softened. Add the minced garlic and cook 1 minute more.
  3. Add the diced zucchini and Tunisian spice blend to the skillet. Cook for 2-3 minutes, stirring occasionally, until the zucchini begins to soften.
  4. Stir in the drained chickpeas, chopped dried apricots, hot sauce, veggie stock concentrate and 1/2 cup water. Bring to a simmer and cook for 5-7 minutes, until the sauce thickens slightly and flavors meld. Season with salt and pepper to taste.
  5. While the tagine simmers, prepare the lemon cream: In a small bowl, combine the sour cream, lemon zest and half of the lemon juice. Stir until smooth. Set aside.
  6. Make the chermoula: In another small bowl, combine the chopped cilantro, minced jalapeño, remaining lemon juice and 2 tablespoons olive oil. Mix well. Season with a pinch of salt.
  7. To serve, divide the fluffy basmati rice between plates. Spoon the chickpea-apricot tagine over the rice. Drizzle with lemon cream and chermoula. Sprinkle sliced almonds on top. Enjoy immediately.

Recipe Tips

For extra depth, toast the sliced almonds in a dry skillet over medium heat for 2-3 minutes until golden before sprinkling.

If you prefer a milder chermoula, remove the seeds from the jalapeño or use only half.
