Onions are one of the most useful vegetables in the kitchen, adding sweetness, savoriness, and depth to everything from soups and stews to sauces, casseroles, tacos, stir-fries, and roasted vegetable dishes. Raw onions bring sharp crunch to salads, sandwiches, salsas, and relishes, while cooked onions become mellow, sweet, and aromatic.
