Instructions

  1. Preheat your oven to 425°F (220°C). Bring a small pot of salted water to a boil for the rice.
  2. Rinse the jasmine rice under cold water until the water runs clear. Add the rice to the boiling water, reduce heat to low, cover and simmer for 15-18 minutes until tender. Drain if needed and set aside.
  3. While the rice cooks, prepare the zucchini. Trim the ends and cut the zucchini into 1/2-inch thick rounds. Toss with 1 teaspoon olive oil, a pinch of salt and pepper. Spread on a baking sheet and roast for 12-15 minutes, flipping halfway, until golden and tender.
  4. In a small bowl, mix the southwest spice blend with a pinch of salt and pepper. Pat the chicken cutlets dry and season both sides with the spice mixture.
  5. Heat 2 teaspoons olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side, until golden brown and cooked through (internal temperature 165°F). Transfer to a plate and tent with foil.
  6. In the same skillet, reduce heat to medium. Add the butter and remaining 2 teaspoons olive oil. Add the cumin and cook for 30 seconds until fragrant. Stir in the cooked rice and pepitas, tossing to coat. Cook for 2 minutes, then remove from heat. Fold in half the chopped cilantro.
  7. In a small bowl, combine the sour cream and smoky red pepper crema. Stir until smooth. Set aside.
  8. To serve, divide the cumin rice between plates. Top with the spiced chicken and roasted zucchini. Drizzle with the smoky crema and garnish with remaining cilantro.

Recipe Tips

For extra flavor, toast the pepitas in a dry pan for 1-2 minutes before adding to the rice.

If you prefer a milder spice, reduce the southwest spice blend to 2 teaspoons.

Leftovers can be stored in an airtight container in the fridge for up to 3 days.
