Instructions

  1. Wash and dry all produce. Core and seed the poblano, then thinly slice crosswise. Halve, peel and thinly slice the onion. Finely dice a few slices until you have 3 tablespoons of diced onion; set aside for garnish. Drain the pineapple. Cut the lime into wedges. Pick the cilantro leaves from the stems; discard the stems.
  2. Heat a drizzle of oil in a large pan over medium-high heat. Add the poblano and sliced onion. Cook, tossing, until lightly charred, about 5-6 minutes. Remove from the pan and set aside.
  3. Heat another drizzle of oil in the same pan over medium-high heat. Add the pineapple and cook, tossing, until lightly browned, about 2-3 minutes.
  4. Add the seitan to the pan. Cook, tossing, until lightly browned, about 2-3 minutes. Stir in the Southwest spice blend and chipotle powder (start with a pinch and adjust to taste). Cook until fragrant, about 1 minute.
  5. Meanwhile, wrap the tortillas in a damp paper towel and microwave on high until warm, about 30 seconds. Alternatively, wrap in foil and warm in a 400°F oven for 5 minutes.
