Add the corn kernels to the same sheet, toss and return to the oven. Continue roasting until both the onion and corn are just beginning to char, about 7 minutes more.
- Heat a drizzle of vegetable oil in a large pan over medium-high heat. Season the skirt steak all over with salt and pepper. Add to the pan and cook to your desired doneness, 2-4 minutes per side. Remove from the pan and let rest for 5 minutes before thinly slicing against the grain.
- Halve, pit and peel the avocado, then cut into cubes. In a medium bowl, combine the roasted sweet potatoes, charred corn and onion, avocado cubes, halved tomatoes, reserved cilantro, a squeeze of lime juice and any remaining minced chili (to taste). Season with salt and pepper. Divide the salad and sliced steak between plates. Drizzle the chimichurri over the steak and serve.
