Instructions

  1. Preheat your oven to 425°F. Cut the potatoes into wedges and toss with a drizzle of oil, garlic powder, salt and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden and crispy.
  2. While the potatoes cook, slice the onion into rings. Heat a skillet or griddle over medium-high heat and cook the onion rings for 4-5 minutes per side until softened and lightly charred. Set aside.
  3. In a small bowl, make the special sauce: combine sour cream, white wine vinegar, ketchup, yellow mustard and minced shallot. Stir well and season with salt and pepper to taste.
  4. Divide the ground beef into two equal portions and shape into patties slightly larger than the buns. Season generously with salt and pepper. Cook the patties in the same skillet over medium-high heat for 3-4 minutes per side for medium doneness.
  5. During the last minute of cooking, top each patty with shredded cheddar cheese and cover the skillet to melt the cheese.
  6. Toast the potato buns lightly in the skillet or oven. Spread a generous amount of special sauce on the bottom bun, then add the cheeseburger patty, griddled onions and tomato slices. Close with the top bun.
  7. Serve the burgers with the garlic potato wedges and extra special sauce on the side for dipping.

Recipe Tips

For extra crispy wedges, soak the cut potatoes in cold water for 30 minutes before roasting, then pat dry.

Let the burger patties rest for a few minutes after cooking to keep them juicy.

Customize your special sauce by adding a pinch of smoked paprika or hot sauce.

FAQ

Can I use a different type of cheese?

Yes, you can substitute cheddar with your favorite melting cheese like Monterey Jack, provolone or American cheese.

How do I make the potato wedges extra crispy?

Make sure the wedges are spread in a single layer on the baking sheet and don’t overcrowd them. You can also flip them halfway through roasting for even browning.

Can I prepare the special sauce ahead of time?

Absolutely! The sauce can be made up to 3 days in advance and stored in the refrigerator. Stir before using.
