Instructions

  1. Preheat oven to 425°F. Wash and dry all produce. Cut potatoes into ½-inch-thick wedges. Trim and thinly slice scallions, separating whites from greens; mince whites. Finely dice tomato. Zest and halve lime. In a small bowl, combine guacamole, half the sour cream, half the tomato, half the scallion greens, salt and pepper; set aside.
  2. Toss potatoes on a baking sheet with a large drizzle of oil, smoked paprika, 1 teaspoon Southwest spice blend, salt and pepper. Roast on top rack until golden brown, 20-25 minutes. Meanwhile, heat a large dry pan over medium-high heat. Add bacon; cook, turning occasionally, until crispy, 6-10 minutes. Transfer to a paper-towel-lined plate.
  3. In a medium bowl, combine ground beef, scallion whites, remaining Southwest spice blend, salt (about ¾ teaspoon for 2 servings) and pepper. Form into two ½-inch-thick patties. Divide pepper jack cheese between the centers of each patty. Gently fold meat around cheese, shaping and sealing to create cheese-stuffed patties slightly wider than the buns.
  4. Heat the pan used for bacon over medium-high heat (add a drizzle of oil if dry). Add patties; cook to desired doneness, 3-5 minutes per side. Meanwhile, halve and toast buns. In a second small bowl, combine remaining sour cream and lime zest. Add water 1 teaspoon at a time until drizzling consistency; season with salt and pepper.
  5. Once potatoes are done, remove from oven and push to center of baking sheet. Sprinkle with Mexican cheese blend; return to top rack until melted, 2-3 minutes. Meanwhile, in a large bowl, combine juice from both lime halves and a drizzle of olive oil; add mixed greens and toss to coat. Season with salt and pepper.
  6. Top cheesy potatoes with lime crema, remaining tomato and scallion greens; divide between plates. Fill buns with patties, bacon and avocado spread. Serve with salad on the side.

Recipe Tips

For extra flavor, cook the patties in the rendered bacon fat.

Roll the lime on the counter before juicing to get more juice.

If you don’t have Southwest spice blend, substitute with a mix of chili powder, cumin and garlic powder.

FAQ

Can I use a different cheese for the stuffing?

Yes, any melting cheese like mozzarella, cheddar or Monterey Jack works well.

Can I make the guacamole from scratch?

Absolutely! Mash 1 ripe avocado with lime juice, salt and diced tomato for a fresh version.

How do I store leftovers?

Store components separately in the fridge. Reheat patties and potatoes in the oven to keep them crispy.
