Instructions

  1. Preheat oven to 425°F. Wash and dry all produce. Halve, peel and thinly slice the onion. Slice the tomato into rounds. Split the brioche buns in half. Shape the ground beef into two evenly sized patties.
  2. Toss broccoli florets on a baking sheet with a drizzle of olive oil and a pinch of salt and pepper. Roast until slightly crispy, 15-20 minutes.
  3. Heat a drizzle of olive oil in a large pan over medium-high heat. Add the sliced onion and cook, tossing, until soft, 5-6 minutes. Stir in 1 tablespoon sherry vinegar and 1 teaspoon sugar. Simmer until liquid is nearly evaporated, 1-2 minutes. Season with salt and pepper. Remove from pan and set aside.
  4. Line another baking sheet with parchment paper. Place the shredded cheddar on it in two even piles. Bake until melted in the middle and crispy at the edges, 5-7 minutes. Tip: If you don’t have parchment, transfer the frico to a plate using a spatula as soon as it comes out of the oven.
  5. Meanwhile, heat a drizzle of olive oil in the same pan over medium-high heat. Season the beef patties all over with salt and pepper. Cook to desired doneness, 3-6 minutes per side. While the patties cook, carefully remove the frico from the baking sheet, then place the buns on the sheet. Toast in the oven until golden, 3-4 minutes.
  6. Assemble the burgers: Place the patties, onion jam, tomato slices, ketchup and a cheddar frico inside each bun. Serve with roasted broccoli on the side.

Recipe Tips

For extra crispy frico, spread the cheese thinly and keep an eye on it-it can burn quickly.

If you don’t have parchment paper, use a spatula to transfer the hot frico to a plate to cool.

Let the patties rest for a minute after cooking to keep them juicy.

FAQ

Can I use a different cheese for the frico?

Yes, any hard, meltable cheese like Parmesan or Gruyère works well, but cheddar gives the best flavor and crispiness.

How do I store leftover onion jam?

Store it in an airtight container in the fridge for up to a week. Reheat gently before using.

Can I make the frico ahead of time?

Yes, bake the frico and store in an airtight container at room temperature for up to 2 days. Re-crisp in a 350°F oven for a few minutes if needed.
