Instructions

  1. Wash and dry produce. Quarter the lime. In a small bowl, whisk together ponzu sauce, brown sugar, soy sauce and Korean chili flakes (use as much or as little as you like). The sugar may not fully dissolve; that’s okay.
  2. Heat a drizzle of oil in a large pan over medium-high heat. Add ground beef, season with salt and pepper and cook, breaking it into pieces, until almost cooked through, about 2-3 minutes. While the beef cooks, move on to the next step.
  3. Stir the ponzu mixture into the pan with the beef. Cook, stirring occasionally, until the beef is fully cooked and the sauce has thickened, about 2-3 minutes. If the mixture seems dry, add a splash of water.
  4. Add the bok choy and napa cabbage to the pan and cook, stirring, until the greens have softened, 30-60 seconds. Remove from heat and squeeze in lime juice (use a big squeeze for 4 servings). Taste and adjust seasoning with salt and pepper if needed.
  5. While the beef cooks, massage the rice package to separate the grains. Partially open the package and microwave for 90 seconds. Be careful when handling-steam may escape.
  6. In a medium bowl, combine mixed greens, sesame dressing and a squeeze of lime juice. Toss to coat. Season with salt and pepper to taste.
  7. Wrap the tortillas in damp paper towels and microwave until warm, about 30 seconds.
  8. Lay the tortillas on a clean work surface. Spread spicy mayo on the bottom third of each tortilla. Top with rice, the beef and vegetable mixture and crispy fried onions. Fold the bottom of each tortilla over the filling, then fold in the left and right sides. Roll tightly to form a wrap.
  9. Slice each wrap in half. Divide the wraps and salad between plates. Garnish the salad with any remaining crispy fried onions and serve with lime wedges on the side.

If the ponzu mixture seems dry when cooking the beef, add a splash of water to help the sauce come together.
