Instructions

  1. Preheat your oven to 425°F (220°C). Wash and dry all produce. Halve, peel and thinly slice the red onion. Slice the Roma tomato into rounds. Split the brioche buns in half. Divide the ground beef into two equal portions and shape into patties slightly wider than the buns.
  2. Place the broccoli florets on a baking sheet. Drizzle with olive oil and season with a pinch of salt and pepper. Toss to coat. Roast in the oven until slightly crispy and tender, 15-20 minutes.
  3. While the broccoli roasts, heat a drizzle of olive oil in a large skillet over medium-high heat. Add the sliced onion and cook, stirring occasionally, until soft, about 5-6 minutes. Stir in 1 tablespoon of sherry vinegar and 1 teaspoon of sugar. Cook until the liquid has nearly evaporated, 1-2 minutes. Season with salt and pepper. Transfer the caramelized onion jam to a small bowl and set aside.
  4. Line a separate baking sheet with parchment paper. Place the shredded cheddar cheese on the parchment in two even piles, spaced apart. Bake in the oven until the cheese is melted in the center and crispy at the edges, 5-7 minutes. Remove from the oven and let cool slightly.
  5. Meanwhile, in the same skillet used for the onions, heat another drizzle of olive oil over medium-high heat. Season the beef patties generously with salt and pepper on both sides. Cook to your desired doneness, 3-6 minutes per side. While the patties cook, carefully transfer the baked frico crisps from the baking sheet to a plate. Discard the parchment paper, then place the brioche buns cut-side down on the same baking sheet. Toast in the oven until golden, 3-4 minutes.
