Instructions

  1. Bring 1 cup water and the chicken stock concentrate to a boil in a small pot. Add the jasmine rice, reduce heat to low, cover and simmer for 15-18 minutes until tender. Remove from heat and keep covered.
  2. While the rice cooks, heat 2 tsp cooking oil in a large skillet over medium-high heat. Add the chicken sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Transfer to a plate.
  3. In the same skillet, add 1 tsp olive oil and the diced onion and green pepper. Sauté until softened, about 4-5 minutes. Stir in the southwest spice blend and cook for 1 minute until fragrant.
  4. Return the cooked sausage to the skillet. Add the cooked rice, 1 tbsp butter and hot sauce. Stir everything together until well combined and heated through. Sprinkle the shredded pepper jack cheese on top, cover the skillet and let it melt for 2-3 minutes.
  5. Meanwhile, make the salsa fresca: In a small bowl, combine the diced tomato, half the lime juice and a pinch of salt. For the lime crema: In another bowl, mix the sour cream with the remaining lime juice.
  6. Serve the skillet topped with the salsa fresca and a drizzle of lime crema. Add extra hot sauce if desired.
