Instructions

  1. Bring a small pot of water to a boil. Add the jasmine rice and cook until tender, about 15 minutes. Drain and set aside.
  2. While the rice cooks, prepare the sauce: In a small bowl, combine sour cream, mayonnaise, half the cilantro (finely chopped), juice from half the lime and half the jalapeño (minced, seeds removed for less heat). Season with salt and pepper. Stir well and set aside.
  3. Season the chicken cutlets on both sides with the fajita spice blend, salt and pepper.
  4. Heat a drizzle of oil in a large skillet over medium-high heat. Add the chicken and cook until golden and cooked through, about 4-5 minutes per side. Transfer to a plate and let rest.
  5. In the same skillet, add a little more oil if needed. Mince the garlic and cook for 30 seconds until fragrant. Add the cooked rice, remaining jalapeño (sliced) and chicken stock concentrate. Stir to combine and heat through.
  6. Dice the tomato and slice the scallions. Stir the tomato and scallions into the rice. Squeeze the remaining lime juice over the rice and season with salt and pepper.
  7. Slice the chicken. Serve the rice on plates, top with sliced chicken and drizzle with the creamy cilantro sauce. Garnish with remaining cilantro leaves.

For a milder sauce, remove all seeds from the jalapeño. For more heat, include some seeds.
