- Heat a drizzle of vegetable oil in a large pan over medium-high heat. Add the diced onion and cook, stirring, until softened, 4-5 minutes. Add the ground beef, season with salt and pepper and cook, breaking up the meat into pieces, until browned, 3-5 minutes (it will finish cooking in the next step).
- Pour the BBQ sauce mixture into the pan with the beef. Cook, stirring, until the sauce has thickened and the beef is cooked through, 2-3 minutes. Taste and adjust seasoning with salt and pepper. Turn off the heat.
- While the filling cooks, toast the potato buns until golden brown.
- Divide the toasted buns between plates. Stuff each bun with as much beef filling as desired and top with sliced pickles. Serve the potato rounds and any remaining pickle slices on the side.
