Instructions

  1. Wash and dry all produce. Halve, peel and thinly slice the onion. Core and thinly slice the green pepper. Quarter the lime. Pat the steak dry; slice crosswise into ½-inch strips and season all over with salt and pepper.
  2. Heat a generous drizzle of oil in a large pan over high heat until very hot. Add the onion, green pepper, salt and pepper. Cook, stirring, until lightly browned, 2-3 minutes. Add the steak and fajita spice blend. Cook, stirring occasionally, until the steak is cooked to your liking, 3-4 minutes more. In the last minute of cooking, stir in the beef stock concentrate and a small splash of water. Cook, stirring, until the water has evaporated, 30-60 seconds. Remove from heat and stir in a generous squeeze of lime juice.
  3. While the steak mixture cooks, wrap the tortillas in damp paper towels and microwave for 30 seconds until warm.
  4. Arrange the warm tortillas, steak mixture, pico de gallo, guacamole, Mexican cheese blend, smoky red pepper crema and remaining lime wedges on a platter. Let everyone build their own tacos. (Note: Steak is fully cooked when internal temperature reaches 145°F.)
