Instructions

  1. Prepare the pico de gallo: Dice the tomato and finely chop a quarter of the onion. Combine in a small bowl with a squeeze of lime juice and a pinch of salt. Set aside.
  2. Slice the remaining onion into thin strips. Remove the stem and seeds from the poblano pepper and slice into thin strips. Clean the portobello mushrooms, remove the stems and slice into 1/2-inch thick strips.
  3. Heat the cooking oil in a large skillet over medium-high heat. Add the onion strips and poblano strips. Cook, stirring occasionally, until they begin to soften, about 3-4 minutes.
  4. Add the portobello strips and Southwest spice blend to the skillet. Season with salt and pepper. Cook, stirring frequently, until the mushrooms are tender and the vegetables are lightly charred, about 5-6 minutes.
  5. Reduce the heat to low. Sprinkle the Mexican cheese blend evenly over the vegetable mixture. Cover the skillet and let the cheese melt, about 1-2 minutes.
  6. While the cheese melts, warm the flour tortillas in a dry skillet or directly over a gas flame until pliable.
  7. To serve, spoon the cheesy mushroom and pepper mixture onto the warm tortillas. Top with the pico de gallo and a drizzle of smoky red pepper crema. Serve with lime wedges on the side.

Recipe Tips

For extra char, cook the vegetables over high heat without stirring too often.

If you prefer a spicier fajita, add a pinch of cayenne or chipotle powder to the spice blend.

Warm the tortillas just before serving to keep them soft and pliable.
