Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
  3. Add the diced zucchini and cook for another 2-3 minutes until slightly tender.

  6. Remove the skillet from heat. Dollop the ricotta cheese over the top of the sauce in spoonfuls. Sprinkle the remaining Parmesan over the ricotta and sauce.
  7. Scatter the prepared croutons evenly over the top.
  8. Transfer the skillet to the preheated oven and bake for 10-12 minutes, until the croutons are golden and the cheese is melty.
  9. Remove from oven and let cool for a few minutes. Garnish with chopped fresh parsley before serving.
