Instructions

  1. Preheat your oven to 425°F. Cut the potatoes into 1/2-inch thick fries. Toss them with a drizzle of oil, the fry seasoning and a pinch of salt and pepper. Spread on a baking sheet and roast for 20-25 minutes, flipping halfway, until golden and crispy.
  2. While the fries cook, prepare the pepper relish. Finely dice the bell pepper and half the onion. In a small bowl, combine the diced pepper and onion with 2 teaspoons of red wine vinegar, a pinch of salt and a pinch of pepper. Set aside to let the flavors meld.
  3. Make the roasted garlic aioli. Peel the garlic clove and finely grate or mince it. In a small bowl, mix the garlic with the mayonnaise and the remaining 3 teaspoons of red wine vinegar. Season with a pinch of salt and pepper. Set aside.
  4. Form the ground beef into two equal patties, about 1/2-inch thick. Season both sides with salt and pepper. Heat a skillet or grill pan over medium-high heat. Cook the patties for 4-5 minutes per side for medium doneness. During the last minute of cooking, top each patty with the mozzarella cheese and cover the pan to melt the cheese.
  5. Split the potato buns and toast them in the oven or on the grill until lightly golden. Spread a generous amount of the roasted garlic aioli on the cut sides of each bun.
  6. Assemble the burgers: place a cheesy patty on each bottom bun. Top with the pepper relish and close with the top bun. Serve immediately with the seasoned oven fries on the side.
