Instructions

  1. Preheat the oven to 425°F (220°C). Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place them cut-side up on a baking sheet and set aside.
  2. In a small bowl, combine the hummus and sour cream. Stir in half of the scallion greens (reserve some for garnish). Season with salt and pepper to taste. Set aside.
  3. Bring a small pot of salted water to a boil. Add the Israeli couscous and cook until tender, about 8-10 minutes. Drain and set aside.
  4. While the couscous cooks, heat a drizzle of oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook until browned, about 5-7 minutes. Add the diced tomato and cook for 1 minute more. Season with salt and pepper.

  7. Serve the stuffed peppers with a dollop of the hummus sauce, a sprinkle of feta cheese and the remaining scallion greens.
