Instructions

  1. Wash and dry all produce. Preheat oven or toaster oven to 400°F. Halve and peel the onions, then thinly slice them into strands. Core the tomato and slice crosswise into thin rounds. Split the brioche buns in half.
  2. Heat a drizzle of olive oil in a large pan over medium-high heat. Add the onions and cook, tossing, until softened, about 4-5 minutes. Stir in 2 tablespoons of balsamic vinegar and reduce heat to low. Cook, stirring occasionally, until very soft, about 10 minutes. Add a splash of water if the vinegar evaporates. Remove onions from pan and set aside.
  3. In a large bowl, combine ground beef and Italian seasoning using your hands. Shape into four patties slightly wider than the buns. Season with salt and pepper. Wipe out the pan used for onions, then heat a drizzle of vegetable oil over medium-high heat. Cook the burgers to desired doneness, 3-5 minutes per side.
  4. While burgers cook, place buns on a baking sheet cut-side up. Sprinkle the Italian cheese blend onto the top halves. Toast in the oven until buns are golden and cheese melts, about 3-4 minutes.
  5. In a small bowl, mix chili powder and ketchup. Set aside. In a large bowl, toss mixed greens with a drizzle of olive oil and the remaining balsamic vinegar. Season with salt and pepper.
  6. Spread the bottom halves of the buns with the chili-ketchup mixture. Assemble burgers: place patties on bottom buns, top with balsamic onions and tomato slices. Close with the cheesy top buns. Serve with the mixed greens salad on the side.
