Instructions

  1. Wash and dry the produce. Adjust an oven rack to the middle position and preheat the oven to 450°F.
  2. In a small bowl, stir together the balsamic vinegar and ketchup to make the glaze.
  3. Mince the garlic and chop the parsley. Halve and peel the onion, then grate 1/2 onion on the large holes of a box grater into a large bowl.

  6. Roast the meatloaves for 10 minutes. While they begin roasting, peel the sweet potatoes and cut them into 1/2-inch cubes.
  7. Place the cubed sweet potatoes in a medium pot with a pinch of salt and enough water to cover by 1 inch. Bring to a boil and cook until tender, about 10 minutes.
  8. After the meatloaves have roasted for 10 minutes, carefully remove the baking sheet from the oven. Add the green beans to the same sheet, toss them with olive oil and a pinch each of salt and pepper, then return the sheet to the oven.
  9. Continue roasting until the meatloaves are cooked through and the green beans are tender and lightly crisped, about 15 minutes more.
  10. Drain the sweet potatoes and return them to the pot. Mash until mostly smooth, then add the butter and honey. Continue mashing until the butter melts and everything is combined. Season generously with salt and pepper.
  11. When the meatloaves and green beans are done, sprinkle the almonds over the green beans and toss to combine.
