Instructions

  1. Wash and dry all produce. Halve, peel and finely dice the onion. Drain and rinse the chickpeas.

  5. Uncover the pot and stir in the spinach. Continue to simmer until the spinach has wilted, 2-3 minutes more. Season generously with salt and black pepper to taste.
  6. Divide the soup between bowls and serve hot.
