Instructions

  1. Bring a large pot of salted water to a boil. Wash and dry all produce. Quarter the zucchini lengthwise, then cut crosswise into ½-inch pieces. Halve, peel and dice the onion. Mince the garlic. Strip 2 teaspoons of thyme leaves from the stems; discard stems and roughly chop the leaves.
  2. Heat a drizzle of olive oil in a large pan over medium-high heat. Add the ground beef and cook, breaking it up into pieces, until browned but not yet cooked through, about 4-5 minutes. Season with salt and pepper.
  3. Once the water is boiling, add the spaghetti. Cook, stirring occasionally, until al dente, 9-11 minutes. Carefully scoop out and reserve ½ cup of pasta cooking water, then drain the spaghetti.
  4. Add the diced onion and zucchini pieces to the pan with the beef. Cook, stirring, until softened, about 5 minutes. Stir in the minced garlic, chopped thyme, soy sauce and half of the Italian seasoning (save the rest for another use). Cook until fragrant, about 30 seconds.
  5. Add the crushed tomatoes and reserved pasta cooking water to the pan. Bring to a boil, then reduce the heat and let simmer until the sauce thickens, about 5 minutes. Season with salt and pepper. Tip: If you have time, let the ragù simmer longer for even more flavor.
  6. Add the cooked spaghetti to the pan with the ragù and toss to combine. Divide between plates. Sprinkle with Parmesan cheese and drizzle with pepperolio to taste.
