- Return the pan to medium-high heat. Add black beans, Tex-Mex paste, remaining Southwest Spice Blend and ¼ cup water (⅓ cup for 4 servings). Bring to a simmer and cook, stirring occasionally, until liquid mostly evaporates, 3-4 minutes. Remove from heat; gently mash beans with a potato masher or fork. Stir in 1 tablespoon butter (2 for 4 servings) until melted. If too thick, add a splash of water. Season with salt and pepper.
- Drizzle tortillas with 1 tablespoon olive oil (2 for 4 servings); brush or rub to coat both sides. Arrange on a baking sheet in a single layer (use 2 sheets for 4 servings). Prick each tortilla with a fork. Bake on top rack, flipping halfway, until lightly golden, 4-5 minutes per side. For 4 servings, bake on top and middle racks, swapping positions halfway. Watch carefully to avoid burning.
- Remove baking sheet from oven. Spread each tortilla with smashed beans, then top with cooked veggies and Mexican cheese blend. Return to oven (top rack or top and middle for 4) until cheese melts, 2-3 minutes.
- Divide tostadas among plates. Top with pico de gallo, lime crema and remaining cilantro. Serve with lime wedges on the side.
