Instructions

  1. Prepare the slaw: In a medium bowl, combine the red cabbage and carrot mix, honey dijon dressing and a squeeze of lemon juice. Toss to coat. Season with salt and pepper to taste. Set aside.
  2. Make the super sauce: In a small bowl, mix together the ketchup, mayonnaise and a pinch of celery salt. Stir until smooth. Set aside.
  3. Make the umami mayo: In another small bowl, combine the sour cream, fry seasoning and remaining celery salt. Mix well. Set aside.
  4. Slice the onion into thick rounds. Heat a grill or grill pan over medium-high heat. Grill the onion slices until charred and tender, about 3-4 minutes per side. Remove and set aside.
  5. Season the ground beef with salt and pepper. Form into 2 patties, each about 5 ounces. Season the chicken cutlets with salt and pepper.
  6. Grill the beef patties for 4-5 minutes per side for medium doneness. During the last minute, top each patty with a slice of gouda cheese and let melt. Grill the chicken cutlets for 5-6 minutes per side until cooked through. During the last minute, sprinkle Monterey Jack cheese on top and let melt.
  7. Toast the potato buns on the grill for about 1 minute, until lightly golden.
  8. Slice the tomato into rounds. Arrange all components on a platter: grilled beef patties, grilled chicken cutlets, toasted buns, sliced tomato, grilled onion, sliced dill pickles, slaw, super sauce and umami mayo.
  9. Let everyone build their own sandwich: start with a bun, add a patty or chicken cutlet, then top with tomato, onion, pickles, slaw and your choice of sauce. Enjoy!
