Instructions

  1. Bring a large pot of salted water to a boil. Add gnocchi and cook until they float, about 2-3 minutes. Drain and set aside.
  2. While gnocchi cooks, heat a large skillet over medium-high heat. Add the chicken sausage and cook, breaking it up, until browned and cooked through, about 4-5 minutes. Transfer to a plate.
  3. In the same skillet, add the bell pepper (diced) and cook for 2-3 minutes until slightly softened. Add minced garlic and cook for 30 seconds.
  4. Stir in the cream sauce base, chicken stock concentrate and 1/4 cup water. Bring to a simmer, then reduce heat to low.
  5. Return the cooked sausage to the skillet. Add the cooked gnocchi and toss to coat in the sauce.
  6. Dice the tomato and slice the scallions. Stir the tomato into the skillet and cook for 1 minute.
  7. Season with salt and pepper to taste. Serve topped with grated Parmesan and scallion greens.

Recipe Tips

For extra flavor, use the rendered fat from the sausage to cook the peppers.

If the sauce is too thick, add a splash of pasta water or milk to loosen it.

Grate your own Parmesan from a block for the best melt and flavor.

FAQ

Can I use a different type of sausage?

Yes, any fully cooked chicken sausage or even Italian pork sausage works well. Just adjust cooking time accordingly.

How do I store leftovers?

Store in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or microwave, adding a splash of water or milk to refresh the sauce.

Can I make this vegetarian?

Absolutely! Omit the sausage and add more vegetables like mushrooms or zucchini. Use vegetable stock concentrate instead of chicken.
