Instructions

  1. Finely dice the onion. Cut the zucchini into thin ribbons using a vegetable peeler. Zest and juice the lemon. Dice the tomato. Remove the sausage from its casing.
  2. In a large pot or Dutch oven, heat a drizzle of olive oil over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until browned, about 5 minutes. Transfer to a plate.
