Cover and bring to a boil, then reduce heat to low and simmer until the pasta is al dente, about 10 minutes.
- Place 2 tablespoons butter in a small bowl and microwave until just softened, about 10 seconds (do not melt). Stir in 1 tablespoon Parmesan, ¼ teaspoon garlic powder, chili flakes to taste and a pinch of salt. Split the ciabatta in half and toast until golden. Spread the butter mixture onto the cut sides, then cut each half diagonally.
- Stir the spinach into the soup until wilted. Stir in 2 tablespoons Parmesan. Season generously with salt and pepper. Ladle the soup into bowls, sprinkle with remaining Parmesan and serve with the ciabatta toasts for dipping. For extra heat, add more chili flakes.
