Instructions

  1. Wash and dry all produce. Halve, peel and thinly slice the onions. Core, seed and thinly slice the bell peppers. Cut the limes into quarters.
  2. Heat a large drizzle of vegetable oil in a large pan over medium-high heat. Pat the steak dry with a paper towel and season with salt, pepper and 1 tablespoon of the southwest spice blend (reserve the rest).
  3. Add the steak to the pan and cook until lightly browned on the bottom, 2-3 minutes. Flip and cook until browned on the other side, about 2 minutes more. Transfer to a cutting board and let rest. (If your pan is crowded, cook the steak in two batches.)
  4. Heat another drizzle of oil in the same pan over medium-high heat. Add the bell peppers and onions, then season with the remaining southwest spice blend. Cook, tossing occasionally, until softened and lightly browned, about 5 minutes. Season with salt and pepper. Remove from heat and set aside.
  5. In a medium bowl, combine the sour cream, hot sauce (to taste) and a squeeze of lime juice. Season with salt and pepper. Stir to combine.
