- Preheat oven to 425°F. Peel and slice carrots into ⅓-inch thick coins. Cut potatoes into 1-inch cubes. Mince half the onion (about ½ cup). Chop parsley.
- Toss carrots with oil, salt and pepper on a baking sheet. Roast for 15 minutes. Meanwhile, boil potatoes in salted water until tender, about 15 minutes. Drain and set aside.
- In a large bowl, combine bread and 6 tbsp milk. Mash until pasty. Add ground beef, half the minced onion, half the parsley, ¼ tsp nutmeg, meatloaf spice blend, salt and pepper. Mix well. Shape into four 1-inch thick loaves.
- Heat oil in a large skillet over medium-high heat. Brown meatloaves for 3 minutes per side. After carrots have roasted 15 minutes, add meatloaves to the baking sheet. Bake until cooked through, about 15 minutes.
- Melt 2 tbsp butter in the same skillet. Cook remaining onion until soft, 2 minutes. Stir in flour for 1 minute. Gradually whisk in 1 cup water, stock concentrates and ½ cup milk. Simmer until thickened, 1-2 minutes. Season with salt, pepper and a pinch of nutmeg.
- Mash potatoes with 2 tbsp butter and ½ cup milk. Season with salt and pepper. Serve meatloaves over mashed potatoes, drizzle with gravy and accompany with roasted carrots and currant jam. Garnish with remaining parsley.
