Dinner10 min2141 cal / serving

These smoky ground pork tacos bring all the slow-cooked flavor without the wait. Seasoned with a Southwest spice blend and enriched with tomato paste, the savory pork and green pepper filling is perfectly balanced by tangy quick-pickled onions, fresh tomato and melted Monterey Jack cheese. A drizzle of chipotle crema ties everything together for a taco night that feels special but comes together in one pan.

Whether you’re feeding the family or hosting a casual taco bar, this recipe is designed for ease and big flavor. The pickled onions add a bright, vinegary pop that cuts through the richness, while the crema adds a smoky, creamy finish. Serve with warm flour tortillas and let everyone build their own perfect taco.

Instructions

  1. Wash and dry produce. Halve and peel onion; thinly slice one half and finely chop the remaining. Core, deseed and dice green pepper into ½-inch pieces. Dice tomato. Roughly chop cilantro.
  2. In a medium bowl, combine sliced onion, vinegar, 1 TBSP water, 2 tsp sugar and salt (we used ½ tsp). Stir until sugar and salt have mostly dissolved. Set aside to pickle, stirring occasionally, until ready to serve.
  3. Heat a drizzle of olive oil in a large pan over medium-high heat. Add ground pork and season with salt and pepper. Cook, breaking up meat into pieces, until browned and cooked through, 4-6 minutes. Transfer to a plate and set aside.
  4. Heat a drizzle of olive oil in the same pan over medium-high heat. Add green pepper and chopped onion; season with salt and pepper. Cook, stirring, until softened, 3-4 minutes. Return pork to pan along with Southwest Spice Blend, stock concentrate, half the tomato paste (all for 4 servings) and ¼ cup water (⅓ cup for 4). Cook, scraping up any browned bits from bottom of pan, until mixture is thickened and saucy, 1-2 minutes more.
  5. While filling cooks, in a small bowl, combine sour cream, a bit of onion pickling liquid to taste (start with ¼ tsp and add more if desired) and a pinch of chipotle powder (add more to taste if you like things spicy). Stir in water 1 tsp at a time until mixture reaches a drizzling consistency. Season with salt and pepper. Wrap tortillas in damp paper towels and microwave until warm and pliable, 30 seconds.
  6. Divide tortillas between plates; fill with pork filling, tomato, Monterey Jack cheese, cilantro, pickled onion (draining first) and chipotle crema. Alternatively, put everything in individual serving bowls and let everyone assemble their own tacos.

Recipe Tips

For extra heat, add more chipotle powder to the crema or sprinkle some on the filling.

If you prefer corn tortillas, warm them in a dry skillet instead of the microwave.

The pickled onions can be made up to a day ahead and stored in the fridge.

FAQ

Can I use ground turkey or chicken instead of pork?

Yes, ground turkey or chicken work well as substitutes. Just be sure to cook until no longer pink and adjust seasoning as needed.

What can I use instead of chipotle powder?

Smoked paprika mixed with a pinch of cayenne pepper can mimic the smoky heat. Start with ½ teaspoon smoked paprika and ¼ teaspoon cayenne, then adjust to taste.

How do I store leftovers?

Store the pork filling, pickled onions and crema separately in airtight containers in the refrigerator for up to 3 days. Reheat the filling in a skillet and warm tortillas before serving.
