Instructions

  1. Preheat oven to 450°F with a rack in the top position (and middle position for 4 servings). Lightly coat a baking sheet (or two for 4 servings) with olive oil. Remove pizza dough from packaging and roll on the sheet to coat all over with oil. Arrange dough balls at least 3 inches apart; cover with a clean kitchen towel and let rest at room temperature for 20 minutes.
  2. After 20 minutes, carefully press and stretch each dough ball into a rough rectangle (about 10 inches long and 5-6 inches wide). If needed, use a rolling pin. Cover again with a towel and let rest another 12 minutes.
  3. While dough rests, core, deseed and dice the bell pepper into 1-inch pieces. Halve, peel and cut the onion into ½-inch-thick wedges.
  4. Remove sausage from casings if necessary. Heat a drizzle of cooking oil in a large pan over medium-high heat. Add bell pepper and onion; cook, stirring occasionally, until beginning to soften, 2-3 minutes. Season with salt and pepper. Add sausage and half the Tuscan Heat Spice (all for 4 servings); cook, breaking up meat, until sausage is browned and cooked through and veggies are tender, 4-6 minutes.
  5. After dough has rested, reshape each piece into a larger rectangle. Spread with marinara sauce, leaving a 1-inch border. Sprinkle with mozzarella, then top with sausage and veggie mixture. Bake on top rack until crust is golden and crisp, 14-18 minutes (for 4 servings, bake on top and middle racks; swap positions halfway).
  6. Drizzle pizzas with balsamic glaze. Slice and serve.
