Instructions

  1. In a small pot, combine the jasmine rice, 1¼ cups water (2¼ cups for 4 servings) and a pinch of salt. Bring to a boil, then cover and reduce heat to low. Simmer until rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.
  2. While the rice cooks, preheat a dry grill to medium-high heat. (If using a grill pan, heat it in step 5.) Wash and dry produce. Halve, peel and thinly slice the shallot. Slice the cucumber into ¼-inch-thick rounds. Halve the grape tomatoes. Quarter the lime. Roughly chop the peanuts and cilantro. Place the wooden skewers in a shallow dish and cover with water to soak (this prevents burning).
  3. In a medium microwave-safe bowl, combine the rice wine vinegar and ¾ teaspoon sugar (1½ teaspoons for 4 servings). Cover tightly with plastic wrap and microwave for 20-30 seconds; stir to dissolve sugar. Add the shallot, cucumber, tomatoes and a drizzle of olive oil. Season with salt and pepper. Set aside, stirring occasionally, until ready to serve.
