Instructions

  1. Cook the rice: In a small pot, combine the jasmine rice, 1 cup water and a pinch of salt. Bring to a boil, then reduce heat to low, cover and simmer until tender, about 15 minutes. Remove from heat and keep covered.

Cook, stirring, until chicken is heated through and spices are fragrant, about 2-3 minutes. Stir in the chicken stock concentrate and 2 tablespoons water, scraping up any browned bits. Remove from heat.
  5. Assemble the bowls: Divide the cooked rice between two bowls. Top with the chicken and pepper mixture. Sprinkle with Monterey Jack cheese, dollop with sour cream and spoon the tomato salsa over the top. Garnish with remaining cilantro and serve with lime wedges.
  6. Optional: Add a pat of butter to the hot rice for extra richness.
