The chickpeas may pop-that’s normal.
- In a medium pot, melt the butter over medium-high heat. Add the garlic and scallion whites and cook until fragrant, about 1 minute. Add the Israeli couscous and remaining thyme leaves, season with salt and pepper and cook, tossing, until the couscous is lightly toasted, 2-3 minutes.
- Stir in the vegetable stock concentrate and 1½ cups water. Bring to a boil, then reduce heat to a simmer. Cook until the couscous is al dente, 10-12 minutes.
- Add half of the roasted vegetables, half of the feta cheese and lemon juice to taste to the pot with the couscous. Toss to combine. Season with salt and pepper. Divide the couscous mixture among plates. Top with the crispy chickpeas and remaining vegetables. Sprinkle with scallion greens and remaining feta cheese.
