Instructions

  1. Bring a medium pot of salted water to a boil. Add the Israeli couscous and cook until tender, about 8-10 minutes. Drain and set aside.

  4. Heat 2 teaspoons of cooking oil in a large nonstick skillet over medium-high heat. Add the onion wedges and zucchini, season with salt, pepper and the sumac. Cook, stirring occasionally, until lightly browned and tender, about 5-7 minutes. Add the grape tomatoes and cook 1 minute more. Transfer the vegetables to a plate and cover to keep warm.
  5. Wipe the skillet clean and add the remaining 2 teaspoons of cooking oil over medium-high heat. Add the za’atar-crusted grilling cheese and cook until the underside is golden and crispy, about 2-3 minutes. Carefully flip and cook the other side until golden, another 2-3 minutes. The cheese should be warm and slightly soft inside.
