Instructions

  1. Preheat oven to 475°F with a rack in the top position (and middle position if making 4 servings). Sprinkle 3 tablespoons flour on a clean work surface. Remove pizza dough from packaging and place on floured surface. Shape each piece into a ball. Sprinkle dough balls with remaining 2 tablespoons flour. Cover with a clean kitchen towel and let rest at room temperature for 20 minutes.
  2. While dough rests, wash and dry the green pepper. Core, deseed and dice into 1-inch pieces. Zest the lime and quarter it.
  3. After 20 minutes, line a baking sheet (or two for 4 servings) with parchment paper. Press and stretch each dough ball into a rough oval shape; place on one side of the prepared sheet (two ovals per sheet). Cover with a clean kitchen towel and let rest 15 minutes.
  4. While dough rests, heat a drizzle of cooking oil in a large nonstick pan over medium-high heat. Add ground beef, diced green pepper, fajita spice blend, a big pinch of salt and pepper. Cook, breaking up meat, until beef is cooked through and green pepper is browned and tender, 4-6 minutes.
  5. After dough has rested 15 minutes, use floured hands to press and stretch each oval into a larger shape, about 10 inches long and 5-6 inches wide. Spread cream cheese over each crust. Top with beef mixture and sprinkle with cheddar. Drizzle or brush edges with olive oil. Bake on top rack until crusts are golden and crisp, 14-18 minutes (for 4 servings, bake on top and middle racks, swapping halfway).
  6. While pizzas bake, in a small bowl, combine sour cream with juice from half the lime and as much lime zest as desired. Season with salt and pepper. Drizzle baked pizzas with lime crema and top with red salsa. Slice and serve with remaining lime wedges.

Recipe Tips

Spray your hands with nonstick cooking spray or dust with flour to prevent dough from sticking.

If the dough resists stretching, let it rest a few more minutes before continuing.
