Instructions

  1. Cook the jasmine rice according to package directions. Fluff with a fork and set aside.
  2. While the rice cooks, prepare the kiwi salsa: Peel and dice the kiwi and tomato. Finely dice half the red onion. Combine in a small bowl. Zest and juice half the lime, add to the salsa and season with salt and pepper to taste. Set aside.
  3. Make the lime crema: In another small bowl, combine the sour cream with the remaining lime juice and a pinch of salt. Stir until smooth. Set aside.
  4. Thinly slice the remaining red onion. Slice the long green pepper into thin rings. Mince the garlic.
  5. Heat a large skillet over medium-high heat. Add the ground pork and cook, breaking it apart, until browned and crispy, about 5-7 minutes. Add the sliced onion, green pepper and garlic. Cook for 2-3 minutes until vegetables are tender.
  6. Pour the teriyaki sauce into the skillet with the pork and vegetables. Stir and cook for 1-2 minutes until the sauce thickens and coats the mixture.
  7. To serve, divide the rice among bowls. Top with the teriyaki pork mixture, then spoon the kiwi salsa over the top. Drizzle with lime crema. Enjoy!

Recipe Tips

For extra crispy pork, let it brown without stirring too often.

Adjust the lime crema to your taste by adding more lime juice or salt.

If you like heat, add a pinch of red pepper flakes to the salsa.
