Think you need meat to make a killer stir-fry? Think again. This veggie version is hearty, saucy and big on flavor-plus, it’s ready in just 30 minutes. Bell pepper, onion and broccoli are sautéed with ginger until tender, then simmered with sweet chili, soy glaze and lime to saucy perfection.

It’s all spooned over fragrant ginger-lime rice, then garnished with cilantro, fried onions and homemade candied peanuts-everything we’re craving and then some.

Instructions

  1. Cook the rice: In a small pot, combine jasmine rice, 1 cup water and a pinch of salt. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  2. While the rice cooks, prepare the vegetables: Peel and finely chop the ginger. Halve, peel and thinly slice the red onion. Core and deseed the bell pepper, then cut into thin strips. Cut the broccoli into small florets. Zest and juice the lime. Roughly chop the cilantro. Roughly chop the peanuts.
  3. Make the candied peanuts: In a small nonstick skillet over medium heat, add the chopped peanuts and a drizzle of oil. Cook, stirring, until fragrant and lightly toasted, about 2 minutes. Add a pinch of salt and a teaspoon of sugar (optional, not listed but implied by ‘candied’) and stir until sugar melts and coats peanuts. Transfer to a plate and set aside.

  7. Serve: Divide the ginger-lime rice between bowls. Top with the stir-fried vegetables. Garnish with candied peanuts, crispy fried onions and chopped cilantro.

Recipe Tips

For extra heat, add a pinch of red pepper flakes or sliced fresh chili to the stir-fry.

If you don’t have sweet soy glaze, substitute with 3 tablespoons soy sauce mixed with 1 tablespoon brown sugar.

To save time, use pre-cut broccoli florets and pre-sliced bell pepper strips.
