Instructions

  1. Preheat oven to 450°F. Wash and dry all produce. Thinly slice sweet potatoes into 1/8-inch rounds. Toss on a baking sheet with a drizzle of olive oil, salt and pepper. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
  2. Meanwhile, halve, peel and mince the shallot. Mince or grate the garlic. Peel and mince or grate the ginger.
  3. In a large bowl, combine ground turkey, shallot, half the ginger, half the garlic, 1/2 teaspoon sriracha and 2 teaspoons soy sauce. Season with salt and pepper. Form into 2 patties. In a small bowl, mix mayonnaise with remaining sriracha to taste. Season with salt and pepper.
  4. Heat a drizzle of oil in a large oven-proof skillet over medium-high heat. Season burgers with salt and pepper. Cook 2-3 minutes per side until browned. Transfer skillet to oven and cook 5-7 minutes more. (If skillet is not oven-proof, place burgers on baking sheet with sweet potatoes.) Split buns and toast in oven for 2-3 minutes.
  5. For the salad: In a large bowl, combine remaining ginger and garlic with a drizzle of oil. Season with salt and pepper. Add mixed greens and toss to coat.
  6. Assemble burgers: Spread sriracha mayo on each bun, top with a patty. Serve with mixed green salad, sweet potato chips and extra sriracha mayo on the side. Enjoy!
