Instructions

Cook, stirring, until slightly softened, 3-4 minutes. Stir in 1 tablespoon butter until melted. Add the Southwest spice blend, flour, salt and pepper; cook, stirring, until fragrant, 30 seconds to 1 minute.
  3. Stir in 2 cups water (3 cups for 4 servings) and the diced tomatoes. Bring to a boil, then add the gemelli. Cook, stirring occasionally, until the pasta is al dente and the liquid is absorbed, 9-11 minutes. If needed, stir in a splash of water until the pasta is coated in sauce.
  4. Meanwhile, place 1 tablespoon butter in a medium microwave-safe bowl; microwave until melted, 30 seconds to 1 minute. Add the panko and Mexican cheese blend. Season with salt and pepper; mix to combine thoroughly. Set aside.
  5. Stir the cream cheese and Monterey Jack into the gemelli mixture until combined. Season with salt and pepper; turn off the heat. If your skillet is not ovenproof (or if you used a pot for 4 servings), transfer the mixture to a baking dish. Evenly sprinkle the panko mixture over the top.
