- Preheat oven to 450°F (230°C). Wash and dry all produce. Halve, peel and thinly slice one onion; mince enough of the sliced onion to get ¼ cup. Zest 1 teaspoon zest from the lime, then cut the lime into quarters. Grate the garlic cloves. Split the buns in half. Cut the potatoes into ½-inch-thick wedges.
