- Microwave the rice according to package directions. Divide the cooked rice between two bowls or to-go containers.
- Drain and rinse the black beans thoroughly. Place them in a medium microwave-safe bowl and stir in half of the green salsa. Microwave until warmed through, about 30 seconds. Divide the beans between the bowls with the rice.
- Wash and dry the produce. Finely chop the tomato. Halve the lime. Top the bowls with the chopped tomato and shredded pepper jack cheese.
- Before serving, microwave the bowls until the cheese is melted, about 45 seconds. Dollop with guacamole and sour cream. Serve with hot sauce and lime halves on the side for squeezing over. Add extra green salsa if desired.
