Instructions

  1. Open the package of diced chicken and drain any excess liquid. Heat a drizzle of olive oil in a large pan over medium-high heat. (For 4 servings, use 4 tablespoons water, 2 tablespoons butter and 1 teaspoon salt.) Cover tightly with plastic wrap and microwave until the beans are warmed through, 2-3 minutes. Mash about half of the beans with a potato masher or fork. Taste and season with salt and pepper if desired.
  3. Arrange the tortillas, cooked chicken, seasoned black beans and shredded Mexican cheese blend in the center of the table for everyone to assemble their own quesadillas. Heat a drizzle of olive oil in the same pan over medium heat. Add a quesadilla and cook until golden brown on one side, 2-3 minutes. Carefully flip and cook until the other side is golden and the cheese is melted, 1-2 minutes more. Repeat with the remaining quesadillas, adding more oil between batches if needed and reducing the heat if they brown too quickly.
  4. Cut each quesadilla in half. Serve with sour cream, guacamole and hot sauce on the side for dipping or drizzling.
