Ingredients
Instructions
- Microwave the rice according to package directions. Divide the cooked rice between two bowls or to-go containers.
- Drain and rinse the black beans thoroughly. Place them in a medium microwave-safe bowl and stir in half of the green salsa. Microwave until warmed through, about 30 seconds. Divide the beans between the bowls with the rice.
- Wash and dry the produce. Finely chop the Roma tomato. Cut the lime in half. Top each bowl with the chopped tomato and shredded Pepper Jack cheese.
- Before serving, microwave the bowls until the cheese is melted, about 45 seconds. Dollop with guacamole and sour cream. Serve with hot sauce and lime halves on the side for squeezing over. Add extra green salsa if desired.
Recipe Tips
For extra heat, add more hot sauce or a pinch of chili flakes.
If you don’t have a microwave, you can warm the rice and beans on the stovetop.
Customize with your favorite toppings like diced avocado or pickled onions.
FAQ
Can I use regular rice instead of microwaveable rice?
Yes, you can cook your own rice from scratch. Just prepare it according to your preferred method and use it in place of the microwaveable rice.
Can I make this bowl vegan?
Absolutely! Omit the cheese and sour cream or use vegan alternatives. The guacamole is already plant-based and the beans and rice are vegan-friendly.
How can I store leftovers?
Store each component separately in airtight containers in the refrigerator for up to 3 days. Reheat the rice, beans and cheese together, then add fresh toppings like tomato, guacamole and sour cream before serving.
