- In a medium pot over medium-high heat, melt the butter. Add the garlic and scallion whites; cook until fragrant, about 1 minute. Add the Israeli couscous and remaining thyme leaves. Season with salt and pepper. Cook, stirring, until the couscous is lightly toasted, 2-3 minutes.
- Stir the veggie stock concentrate and 1½ cups water into the pot. Bring to a boil, then reduce heat to a simmer. Cook until the couscous is al dente, 10-12 minutes.
- Add half the roasted vegetables, half the feta cheese and a squeeze of lemon to the pot with the couscous. Toss to combine. Season with salt and pepper to taste. Divide the couscous mixture between plates. Top with the crispy chickpeas, remaining roasted vegetables, scallion greens and remaining feta cheese. Serve immediately.
