Brunch10 min280 cal / serving

This no-cook lunch board is perfect for when you want something satisfying but don’t feel like turning on the stove. Creamy fresh mozzarella, salty prosciutto and juicy tomato are drizzled with a sweet-tangy balsamic glaze and served alongside crispy toasted sourdough. A crunchy trail mix of cashews, pepitas and dried cranberries adds a sweet and salty finish.

Feel free to layer everything on the bread for a hearty open-faced sandwich or keep it deconstructed and dip each bite into the balsamic glaze. It’s a flexible, fun meal that comes together in minutes.

Instructions

  1. Wash and dry the produce. Cut the prosciutto slices in half crosswise. Slice the fresh mozzarella into ¼-inch-thick rounds. Thinly slice the tomato into rounds and season with a drizzle of olive oil, a pinch of salt and a few grinds of pepper.
  2. In a small bowl, combine the cashews, pepitas and dried cranberries to make the trail mix. Set aside.
  3. Toast the sourdough bread until golden brown, then cut each slice in half diagonally.
  4. Divide the toasted sourdough between two plates. Arrange the prosciutto, mozzarella and tomato slices on the side. Drizzle everything with as much balsamic glaze as you like. Serve the trail mix in small bowls alongside the board.

Recipe Tips

For extra flavor, let the mozzarella come to room temperature before serving.

If you prefer a warm lunch, lightly toast the sourdough and let the prosciutto warm slightly on the bread.

FAQ

Can I substitute the prosciutto with another meat?

Yes, you can use thinly sliced salami, ham or even roasted turkey for a different flavor.

What can I use instead of balsamic glaze?

A simple balsamic vinegar reduction works or you can use a honey-balsamic dressing for a similar sweet-tangy taste.

How should I store leftovers?

Store the components separately in airtight containers in the refrigerator. The trail mix can be kept at room temperature.
