Instructions

  1. Preheat your oven to 425°F (220°C). Dice the potatoes into 1-inch cubes. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15 minutes.
  2. While the potatoes cook, slice the zucchini into half-moons about 1/2-inch thick. Toss with 1 tsp olive oil, smoked paprika, chili flakes, salt and pepper. Spread on a baking sheet and roast for 12-15 minutes until tender and lightly charred.
  3. Pat the scallops dry with paper towels and season with salt and pepper. Heat 2 tsp olive oil in a non-stick skillet over medium-high heat. Sear scallops for 2-3 minutes per side until golden brown and opaque. Remove from skillet and set aside.
  4. Reduce heat to medium. Add the remaining 1 tsp olive oil and minced garlic to the skillet. Cook for 30 seconds until fragrant. Add the seafood stock concentrate, juice of half the lemon and 2 tbsp butter. Stir until melted and combined. Simmer for 1 minute.
  5. Drain the potatoes and return to the pot. Mash with crème fraîche, salt and pepper to taste. Stir in half the chopped chives.
  6. Slice the remaining lemon half into wedges. Serve the scallops over the mashed potatoes, drizzle with lemon butter sauce and garnish with remaining chives and lemon wedges. Serve the roasted zucchini on the side.
