Dinner10 min1303 cal / serving

This Chinese-Peruvian fusion dish, inspired by the classic Lomo Saltado, is a beloved staple across South America. Tender strips of steak are dredged in a seasoned cornstarch coating, then quickly stir-fried with onion and tomato until just cooked through. The finishing touch is a spicy-tangy sauce made with soy, vinegar and Sriracha that coats every bite.

Serve this vibrant stir-fry over a bed of fluffy jasmine rice and alongside crispy oregano-roasted potato wedges. The combination of textures and flavors-from the crunchy potatoes to the savory steak and zesty sauce-makes for an unforgettable meal that comes together in under an hour.

Instructions

  1. Adjust rack to top position and preheat oven to 425°F. Wash and dry produce. Cut potatoes into ½-inch-thick wedges. Toss on a baking sheet with a drizzle of oil, oregano, half the garlic powder, salt and pepper. Roast on top rack until browned and tender, 20-25 minutes.
  2. Halve, peel and cut half the onion into ½-inch wedges. Cut tomato into ½-inch wedges. Roughly chop cilantro.
  3. In a small pot, combine rice, 1¼ cups water and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.
  4. Pat steak dry with paper towels; slice into 1-by-3-inch strips. In a medium bowl, combine cornstarch, half the cumin, remaining garlic powder, salt and pepper. Add steak and toss until coated.
  5. Heat a drizzle of oil in a large pan over medium-high heat. Add steak and cook, tossing occasionally, until a crust forms, 4-6 minutes. Turn off heat; transfer to a plate. Wipe out pan.
  6. Heat another drizzle of oil in the same pan over medium heat. Add onion wedges and tomato; cook, stirring occasionally, until slightly tender, 4-6 minutes. Add steak, soy sauce, Sriracha, ⅓ cup water, 2 tsp vinegar and ¼ tsp sugar. Cook, stirring constantly, until sauce has thickened and steak is cooked through, 1-3 minutes. Taste and season with salt and pepper if desired.
  7. Fluff rice with a fork; stir in 1 TBSP butter. Divide rice and potatoes between plates. Top potatoes with steak stir-fry. Garnish with cilantro and serve.

Recipe Tips

For the best crust on the steak, make sure the pan is hot before adding the meat and do not overcrowd the pan.

If you prefer less heat, reduce the Sriracha to 1/2 teaspoon or omit it entirely.

The potatoes can be cut into wedges ahead of time and stored in cold water to prevent browning.
