Instructions

  1. Preheat your oven to 425°F (220°C). Cut the potatoes into wedges, then toss with 2 teaspoons olive oil, garlic powder, salt and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden and crispy.
  2. While potatoes roast, heat 2 teaspoons olive oil in a large skillet over medium-high heat. Remove the Italian pork sausage from its casings and add to the skillet. Cook, breaking up the sausage with a spoon, until browned and crumbled, about 5-7 minutes. Transfer to a plate.
  3. In the same skillet, add the sliced onion and long green pepper (seeded and thinly sliced). Cook until softened and lightly charred, about 5 minutes. Stir in the tomato paste and Italian seasoning, cooking for 1 minute more. Return the sausage to the skillet and mix to combine. Season with salt and pepper to taste.
  4. Slice the demi-baguettes in half lengthwise. Spread the cut sides with butter and place on a baking sheet, cut side up. Toast in the oven for 3-4 minutes until lightly golden.
  5. Remove the baguettes from the oven. Divide the sausage and pepper mixture evenly among the bottom halves. Top with shredded mozzarella cheese. Return to the oven and bake for 3-5 minutes until the cheese is melted and bubbly.
  6. Place the top halves of the baguettes over the filling. Cut each hero in half if desired. Serve hot with the garlic potato wedges on the side.
