- Heat a drizzle of oil in a large pan over medium-high heat. Add the minced jalapeño and cook, stirring occasionally, until softened and lightly browned, 2-4 minutes. Transfer to a medium bowl to cool slightly.
- Once the jalapeño has cooled, add cream cheese, Monterey Jack cheese, the remaining Fry Seasoning, a pinch of salt and pepper to the bowl. Stir to combine.
- Form the ground beef into two ½-inch-thick rounds (four rounds if making 4 servings). Season all over with salt and pepper. Divide the jalapeño-cheese filling between the centers of each round. Gently fold the edges of the meat around the filling, shaping and sealing to create stuffed patties. Make each patty slightly wider than the burger buns.
- Heat a drizzle of oil in the same pan used for the jalapeño over medium-high heat. Add the patties and cook to desired doneness, 3-5 minutes per side. Meanwhile, halve the potato buns and toast until golden brown.
- Spread a thin layer of ranch mayo on the cut sides of the bottom buns. Place the patties on the buns, top with crispy fried onions and add as much ranch mayo as you like. Serve the burgers with the roasted potato wedges and any remaining ranch mayo on the side for dipping.
Recipe Tips
For less heat, remove all seeds and ribs from the jalapeño. For more heat, leave some seeds in.
